Ingredients
- 1 tablespoon oil of your choice
- 1 small onion, diced
- 1 medium pavakkai, diced
- 2 cloves garlic, minced
- 1 teaspoon ginger paste
- 1 teaspoon coriander powder
- ½ teaspoon cumin powder
- ¼ teaspoon turmeric
- A pinch of chili powder
- 1 cup tomato puree
- 1 teaspoon tamarind paste
- Salt to taste

Directions

Heat oil in a pan over medium heat. Add onion and sauté for a few minutes until it starts to turn golden-brown.

Add pavakkai, garlic and ginger to the pan and sauté for 6-8 minutes until the pavakkai is tender.

Add all the dry spices (coriander powder, cumin powder, turmeric, chili powder), mix well and cook for 2 minutes.

Add tomato puree and cook for 5 minutes until the sauce becomes thick and the pavakkai is cooked through.

Add tamarind paste and salt to taste and cook for a further 1-2 minutes. Take it off the heat.
