Ingredients
- 1 cup of couscous
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of white wine, optional
- 2 cups of vegetable stock
- Salt and pepper to taste

Preheat your oven to 375°F (190°C).

Heat the olive oil in a large frying pan over medium-high heat. Add the onion, bell pepper, zucchini, and garlic to the pan and cook for about 5 minutes, stirring regularly to prevent the vegetables from burning.

Add the couscous to the frying pan and stir to combine with the vegetables for about 2 minutes.

Add the wine to the couscous if desired and cook for another minute, stirring regularly.

Pour the vegetable stock into the pan and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan and cook for 10 to 12 minutes.

Take the pan off the heat and check the couscous is fully cooked. If it’s not, cover and cook for a few more minutes.

Fluff the couscous with a fork then season with salt and pepper to taste.
