Pani Puri

Ingredients
- 1 ½ cups all-purpose flour
- ½ teaspoon cumin powder
- ¼ teaspoon turmeric powder
- ½ teaspoon salt
- 1 teaspoon oil
- ¼ cup yogurt
- ½ cup cold water
- 2 ½ cups vegetable oil for frying
Directions
- In a large bowl, mix together the all-purpose flour, cumin powder, turmeric powder, and salt.
- Drizzle in the oil, stir to combine, and then create a well in the center.
- Pour the yogurt into the well, and then slowly begin to add the cold water while using a wooden spoon to mix everything together.
- Once the dough is completely combined, knead it for a few minutes on a clean, lightly floured surface.
- Form the dough into a ball, cover with plastic wrap, and let the dough rest for 45 minutes.
- Once the dough has finished resting, divide it into small balls (about the size of a golf-ball). Use a rolling-pin to roll out the dough until it’s about ⅓ inch thick.
- Use a biscuit cutter or a glass to cut the dough into small circles and then place the circles on a floured plate.
- Heat the oil in a large pot over medium heat.
- Fry the circles of dough in batches until they become golden-brown. (Make sure to keep an eye on the dough so it doesn’t burn!)
- Remove the pani puri from the oil and transfer them to a paper towel-lined plate.
- To assemble the pani puri: Place a small spoonful of yogurt sauce onto each pani puri and then top with chopped vegetables.
- Serve the pani puri while they’re still hot and crispy!
