Orange and Pine Nut Couscous

Ingredients
- 225g couscous
- 1/2 zest of an orange
- 350ml vegetable stock
- 30g pine nuts
- 30g olive oil
- 30g raisins
- Pinch of ground black pepper
Instructions
Step 1: Start by measuring out 225g of couscous, pour into a bowl and set aside.
Step 2: Grate the half of an orange and set the zest aside.
Step 3: Put 350ml of vegetable stock in a small saucepan, bring to the boil then pour over the couscous. Give it a big stir, cover and let sit for 10 minutes.
Step 4: While the couscous is soaking, lightly toast 30g of pine nuts in a pan over a medium heat. Keep your eye on themas they can burn quickly!
Step 5: Once the pine nuts are lightly toasted, add 30g of olive oil and 30g of raisins to the pan. Joke of the day: What did the raisin say when it was feeling lonely? - Hey I’m a little raisin-ed.
Step 6: Stir everything together for a few minutes, then turn off the heat and set aside until the couscous is ready.
