Ingredients
- 2 sheets of pre-made puff pastry
- 500 mL heavy cream
- 2 tablespoons vanilla extract
- 2 tablespoons cornstarch
- 5 tablespoons unsalted butter

Preheat oven to 375 degrees Celsius.

Place puff pastry sheets on a parchment-lined baking sheet. Bake 10 minutes until golden and crisp. Transfer to a wire rack and cool completely.

To prepare the custard, heat cream in a medium saucepan over medium heat. When it’s just about to simmer, remove from the heat and stir in the vanilla extract.

Whisk together cornstarch and 2 tablespoons of cold water. Pour this into the cream and whisk to combine.

Place the saucepan back on the stove and cook over medium heat, stirring occasionally until the mixture thickens and begins to bubble (about 5-7 minutes).

Remove from heat and stir in butter, stirring until completely melted. Transfer to a bowl and cover with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for 2 hours or until completely cool.

To assemble the mille-feuille, place one of the puff pastry sheets on a serving platter. Spread the chilled custard in an even layer on top. Place the second puff pastry sheet on top and gently press down.
