Mediterranean Spatchcock Chicken

Ingredients
- 2 cloves of garlic
- 2 sprigs of rosemary
- 4 tablespoons of olive oil
- 1 small lemon
- 1 whole chicken, spatchcocked
Preparation

Preheat the oven to 375F (190C).

Peel and mince the garlic.

Pick the leaves off of the rosemary and mince them.

In a bowl combine the garlic, rosemary and olive oil.

Cut the lemon in half and squeeze the juice into the mixture.

Mix everything together.

Place the spatchcocked chicken in a roasting pan.

Put the marinade over the chicken and rub it in all over.

Place the remaining lemon halves in the roasting pan beside the chicken.

Put the pan in the oven and bake for 40 minutes.

When the chicken has cooked through and reaches an internal temperature of 165F (74C), take it out of the oven and let it rest for 10 minutes before serving.
