Ingredients
- 2 cups of chana dal
- ¼ teaspoon baking soda
- 1 teaspoon cumin powder
- 1 teaspoon garlic paste
- 2 teaspoon ginger paste
- 2 chopped green chillis
- 2 tablespoons finely chopped cilantro
- 1 finely chopped onion
- 1 teaspoon mustard seed
- ¼ teaspoon turmeric powder
- Oil for frying
Directions

Soak the chana dal in water overnight and then drain off the water in the morning.

Add the baking soda and 2 tablespoons of water to the chana dal and mix it until it becomes a paste.

Now it’s time to add in the spices! My kids absolutely LOVE this part! “Add the spices, add the spices, let’s make it nice!! Stir in all of the cumin, garlic paste, ginger paste, green chillis, cilantro, onion, mustard seed, and turmeric powder.

Heat oil in a deep-fryer or large saucepan to 350ºF.

Make small, round patties of the mixture and carefully drop them into the hot oil.

Fry until golden brown and crispy, about 2 minutes per side.

Remove the cooked vadas from the oil and drain on a paper towel.

Serve the crispy, delicious Masala Vadas while still hot.
