Madeleines au citron

Ingredients
- 250g of all purpose flour
- 1 teaspoon of baking powder
- 2 medium eggs (room temperature)
- 150g of butter (melted and cooled to room temperature)
- 80g of white sugar (granulated)
- 2 tablespoons of freshly squeezed lemon juice
- Zest of 1 lemon
- 70ml of milk (room temperature)
Directions
- Preheat your oven to 375°F.
- Grease your Madeleine tray with butter and a light dusting of flour.
- In a medium bowl, sift together the flour and baking powder.
- In a separate bowl beat together the eggs, butter and sugar until light and fluffy.
- Add the milk and lemon juice to the egg mixture and mix well.
- Slowly add the dry ingredients to the wet ingredients and mix until everything is well combined.
- Fold in the lemon zest until evenly distributed.
- Evenly spoon the Madeleine batter into the 10 cavities of the prepared Madeleine tin until it is slightly more than 3/4 full.
- Place the Madeleine tin on the lowest shelf of the preheated oven and bake for 30-35 minutes.
- When finished baking, remove from the oven and allow to cool for 15 minutes.
- Carefully run a knife around the edges of the Madeleines, and then gently turn out onto a cooling rack to cool completely.
