Loaded Nachos

Ingredients
- 200 grams vegetable tortilla chips (Gluten free to make the recipe gluten free friendly)
- 30 grams oil
- 170 grams black beans
- 120 grams cherry tomatoes
- 100 grams Avocado
- 60 grams onion
- 30 grams cilantro
- 120 grams organic cheese (leave this out to make it vegan)
- 4 tablespoons lime juice
Directions
- Preheat the oven to 375°F (190°C).
- Spread the chips in a single layer on a baking sheet. Pour the oil onto the chips, making sure they all get some.
- Bake in preheated oven for 15 minutes or until they’re nice and crispy.
- While the chips are baking, heat up the black beans in a small saucepan over medium-high heat and let simmer.
- Chop the tomatoes, avocado, onion, and cilantro and mix in a small bowl.
- When the chips are done baking, spread the heated black beans over the chips, and then top with your tomato and avocado mixture.
- Sprinkle with the cheese.
- Put back in the oven for another 15 minutes or until the cheese is melted and bubbly.
- Remove from heat and let cool for 5 minutes.
- Squeeze the lime juice over top, and voila! You’ve made a delicious Loaded Nachos.
