Lauki Ka Halwa

Ingredients
- 500g Lauki (Bottle Gourd)
- 300ml Vegetable Oil
- 250g All Purpose Flour (Maida)
- 75g Sooji (semolina)
- 250g Sugar
- 2tsp Cardamom Powder
- 10-12 Raisins
- 5 Cashew Nuts
- 2 drops of Kewra Water (a fragrant extract of flowers)
Directions
- Start by peeling the skin of the lauki and then grate it until you get around 4 cups of grated lauki.
- Heat a pan on medium heat, add oil and let it get hot.
- Once the oil is hot, add all purpose flour (maida) and stir continuously.
- When the flour starts to brown, add sooji to it and mix well. Lower the flame and cook for another 5 mins or until the flour turns golden-brown.
- Now add the grated lauki, sugar, cardamom powder, raisins and cashew nuts and mix everything well.
- Increase the flame to medium-high and stir continuously.
- After 5 mins or so, the lauki will start to soften. At this point, reduce the flame to low and cover the pan.
- Let the halwa cook for about 15 minutes, stirring occasionally.
- After 15 minutes, the halwa should be ready. Add a drop of Kewra water for fragrance, stir one final time and turn off the flame.
Recommended Sides
This Halwa is best served with a dollop of cream or as it is with crushed nuts and raisins on top. Enjoy!
