Ingredients
- 1 large potato
- 4 oz cubed pork
- 8 oz onion
- 8 oz carrots
- 8 oz beets
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
Directions
- Peel and cube the potatoes into 1 inch pieces and set aside.
- Cut the cubed pork into bite-sized pieces and set aside.
- Peel and chop the onion into very small pieces and set aside.
- Peel and chop the carrots and beets into small cubes and set aside.
- Heat the olive oil in a large pot over medium-high heat.
- Add the pork, onion, carrots, and beets to the pot and cook for 5-7 minutes, stirring occasionally.
- Add the potatoes and flour to the pot and stir to combine.
- Add 1 cup of water to the pot, stir, and bring to a boil.
- Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until the potatoes are cooked through.
