Ingredients
- 300 g Spätzle (the dried spätzle are the best if you can find them - if not, make 300g of fresh spätzle)
- 2 onions
- 4 tablespoons butter
- 400 g Emmental cheese
- 4-5 tablespoons flour
- splash of milk
- 2-3 teaspoons ground nutmeg
- Optional - for adults - handful of chives (diced)

Prepare the Children: Children are always happy to help in the kitchen, so get them set up for the preparation. Peel and dice the onions, encouraging the youngest to help, explain to them how onions are good for us (children like to know the WHY).

Cook the Spätzle: Bring a large pot of salted water to a boil. Add the spätzle and stir until they are cooked al dente.

Make the Cheese Sauce: Melt the butter in a large saucepan. Once melted, add the flour and stir until it forms a paste. Slowly add the milk, stirring continuously so that it forms a smooth sauce. Add the Emmental cheese and the nutmeg and let the sauce simmer until it thickens (approx. 10 minutes).

Mix the Spätzle with the Cheese Sauce: Once the spätzle and the cheese sauce are both cooked, add the spätzle to the cheese sauce and stir until the spätzle are evenly coated. Add the diced onions and mix everything together one more time.

Serve: Transfer your Käsespätzle to plates and sprinkle some diced chives or parsley on top. Tell a family friendly joke at the table and enjoy your cheesy noodles!

Käsespätzle is best served with a side salad of rocket, cherry tomatoes and cucumber. You could also create some ‘rainbow’ carrots with your kids.
