Katsudon

General Information:
Ingredients:
- 400g of pork cutlets
- 4 cups of cooked Japanese style white rice
- 1/2 cup of breadcrumbs
- 2 eggs
- 3 tablespoons of soy sauce
- 2 tablespoons of mirin
- 2 tablespoons of sesame oil
- 1/2 of a onion, finely chopped
- 2 cloves of minced garlic
- 2 bunches of green onions, finely chopped
Directions:

Preheat oven to 200°C and prepare a baking sheet lined with parchment paper.

Place the pork cutlets on the baking sheet and bake for 10 to 15 minutes, or until golden brown and cooked through.

Meanwhile, heat sesame oil in a medium saucepan over medium heat.

Add the onion and garlic, and cook for 2-3 minutes, or until the vegetables are starting to soften.

Add the soy sauce and mirin, and cook for 2-3 minutes, or until the sauce starts to reduce and thicken.

Remove the saucepan from the heat and stir in the green onions.

Place cooked rice into four bowls.

Cut the cooked pork cutlets into 1-2 inch cubes and place the cubes into the four bowls of rice.

Whisk together the eggs and pour the mix over the pork cutlets and rice.

Dust each bowl with breadcrumbs and place it back into the oven to cook for 2-3 minutes, or until the egg is cooked through.

Serve each bowl with a sprinkle of green onions.
