Ingredients
- 2 medium sweet potatoes, peeled
- 4 cups of kale
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 teaspoons ground black pepper
Directions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Peel and dice the sweet potatoes into 1 inch cubes and add them to the baking sheet.
- Wash and remove the stems of the kale leaves, then tear the kale into small pieces.
- Add the olive oil to the baking sheet and toss the sweet potatoes so they are evenly coated.
- Add the garlic, kale, and pepper to the sweet potatoes and mix until all ingredients are well combined.
- Bake for 20 minutes or until sweet potatoes are fork tender.
