Ingredients
- 2kg potatoes
- 150g pork tenderloin
- Cooking oil for frying
- 1 onion
- Ground nutmeg
- Milk

Directions

Preheat oven to 365°F (185°C).

Peel and cut potatoes into 2 cm cubes.

Cut pork tenderloin into 2 cm cubes.

Heat a large skillet or pan over medium heat and add cooking oil.

When oil is hot, add onions and stir fry until lightly golden. (Tip: Kids love to help with the stirring, so why not make a family activity out of it!)

Add potatoes to the pan and fry for around 2 minutes.

Add pork cubes and fry for a further 2 minutes.

Mix 600 ml of milk, a pinch of nutmeg, and a bit of salt in a bowl and pour over the pork and potatoes.

Place the skillet on the middle oven rack and bake for 45 minutes until the potatoes are cooked through and the sauce has thickened.

To finish, turn the oven to broil and allow the top to form a brown and crunchy crust.

Serve the Haxen warm with your choice of sides. Enjoy!

- Quick and Easy applesauce
Mix together 4 peeled and thinly sliced apples, 1 tsp lemon juice, 1/4 cup of water, 1/4 cup of white sugar, 1/2 tsp ground cinnamon and 1/4 tsp ground nutmeg in a medium saucepan. Put the saucepan over medium heat and bring the mixture to a boil, stirring constantly. Reduce heat to low and simmer for 10-15 minutes, or until the apples are soft. Serve warm.
- Steamed Veggies
Mix together 2 cups of your choice of vegetables (broccoli, beans, carrots etc) in a steamer. Place the steamer over boiling water and steam for 8-10 minutes until tender. Drizzle with a bit of extra virgin olive oil, a pinch of salt and some freshly ground pepper. Serve hot.
