Yakisoba

Ingredients
- 5 ounces (140 g) Yakisoba Noodles or Ramen Noodles
- 1/2 cup (125 mL) Water
- 2 Tablespoons (30 mL) Soy Sauce
- 3 Tablespoons (45 mL) Mirin
- 2 teaspoons (10 mL) Sugar
- 1 Tablespoon (15 mL) Canola Oil
- 1/4 cup (60 mL) Green Onions, Chopped
- 1 cup (240 mL) Cabbage, Chopped
- 1 cup (240 mL) Carrots, Chopped
- 3 ounces (90 g) Bean Sprouts
- 3 ounces (90 g) Pressed Tofu
Directions

Start by bringing a pot of water to a boil to cook the noodles. Once boiling, add the noodles and cook until just al dente (they should still have a bit of a bite).

When the noodles are almost cooked, make the sauce. In a small bowl, mix together the water, soy sauce, mirin, and sugar until the sugar is dissolved.

Once the noodles are cooked, drain and run them under cold water to stop the cooking.

In a large skillet or wok, heat the oil over medium-high heat. Add the green onions, cabbage, carrots, bean sprouts, and tofu and stir fry for 5 minutes, or until the vegetables are beginning to soften.

Add the noodles and sauce and stir fry for another 5 minutes, or until the noodles and vegetables are cooked through.

Serve the yakisoba hot with a side of steamed rice, if desired. Enjoy!
