Ingredients
- 500g potatoes
- 150g all-purpose flour
- 1 egg
- 100g fresh basil leaves
- 50g pine nuts
- 1 clove of garlic
- 50ml olive oil
- 50g grated Parmesan cheese
- 50g grated mozzarella cheese
Directions
- First, let’s make the gnocchi dough. Start by peeling the potatoes and cutting them into small chunks. Boil them in a pot of water until they are soft (about 15-20 minutes).
- Once the potatoes are cooked, drain them and let them cool for a few minutes. Then, mash them until there are no lumps left.
- In a large mixing bowl, combine the mashed potatoes, all-purpose flour, and the egg. Mix everything together until a dough forms. If the dough is too sticky, you can add a little more flour.
- Roll the dough into long ropes on a floured surface. Cut the ropes into small pieces to form the gnocchi shapes. You can get your little helpers to assist with this step by rolling the dough or cutting the shapes with a plastic knife.
- To make the pesto sauce, combine the fresh basil leaves, pine nuts, garlic, olive oil, and Parmesan cheese in a food processor. Blend everything until smooth.
- Cook the gnocchi in a pot of boiling water for about 2-3 minutes, or until they float to the surface. Drain them and toss them with the pesto sauce.
- Serve the gnocchi di patate al pesto on a plate and sprinkle some grated mozzarella cheese on top. Enjoy!
