Ingredients
- 500g white asparagus
- 1 small onion
- 1 small potato
- 1 liter vegetable broth
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 200ml milk
Directions
- Prepare the asparagus: Start by washing the asparagus under cold water. Snap off the woody ends by bending each spear until it breaks naturally. Cut the asparagus into small pieces, about 1cm in length.
- Chop the onion and potato: Peel and finely chop the onion. Peel the potato and cut it into small cubes.
- Cook the vegetables: In a large pot, melt the butter over low heat. Add the chopped onion and potato, and cook until the onion is translucent, stirring occasionally.
- Make the roux: Sprinkle the flour over the cooked vegetables and stir well to combine. Cook for 1-2 minutes to get rid of the raw flour taste.
- Add the asparagus: Pour in the vegetable broth and add the chopped asparagus. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes, or until the asparagus is tender.
- Blend the soup: Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a regular blender in batches.
- Add the milk: Stir in the milk and let the soup simmer for another 5 minutes. Adjust the seasoning if necessary.
