Fried Artichokes

Ingredients
- 2 artichokes
- 2 tablespoons of olive oil
- 2 tablespoons of parsley, chopped
- 1/2 teaspoon of lemon zest
- Ground black pepper, to taste
Directions
- To begin, Steve recommends that you wash and trim the artichokes by cutting off the top and bottom. Then, use a sharp knife to cut away any of the tough outer leaves.
- Once the artichokes are ready, put them in a pot of boiling water and let them cook for 15 minutes. After 15 minutes, remove them from the boiling water and let them cool.
- Now, in a large skillet over medium-high heat, heat the olive oil. Once the oil is hot, place in the artichokes and fry them for about 7-10 minutes, or until they are golden brown.
- When the artichokes are done, remove them from the skillet and sprinkle them with the parsley, lemon zest, and black pepper - and that’s it! Steve likes to joke, “You fried up some arti-yum-chokes!”.
