Ingredients
- 2 boneless, skinless chicken breasts (480 g)
- 2 tbsp olive oil (30 ml)
- 1 onion (200 g), finely chopped
- 1 carrot (100 g), grated
- 2 cloves garlic, minced (6 g)
- 2 cups chicken stock (480 ml)
- 2 tbsp cornstarch (19 g)
- 2 tbsp butter (30 g)
- 1/3 cup white wine (77 ml)
- 2 tsp paprika (6 g)
- 2 tsp dried thyme (6 g)
- 2 tsp garlic powder (6 g)
- 1/4 cup parmesan cheese (40 g), grated
- Salt and pepper, to taste
Directions

Start by prepping your ingredients! Cut the chicken into bite-sized cubes. Finely chop the onion, grate the carrot, and mince the garlic.

In a large pan, heat the oil over medium heat. Once hot, add the chicken to the pan and cook for about 5 minutes, stirring occasionally, until the chicken is cooked through.

Add the onion, carrot, and garlic, and cook for an additional 3 minutes.

In a medium bowl, whisk together the chicken stock and cornstarch. Add the mixture to the pan and bring to a boil.

Reduce the heat to low and stir in the butter, white wine, paprika, thyme, and garlic powder. Stir until everything is well combined.

Add the parmesan and season with salt and pepper, to taste.

Ladle the fondue de poulet into individual serving dishes and serve warm.
