Ingredients
- 4 medium potatoes, boiled and peeled
- 4 tablespoons of oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- 1 small onion, finely chopped
- 1 teaspoon of turmeric powder
- 1/2 teaspoon of red chilli powder
- 2 tablespoons of roasted and coarsely ground peanuts
- 2 tablespoons of sesame seeds
- 2 teaspoons of sugar
- 1/2 cup of chopped coriander leaves
- Salt to taste
- 1/3 cup of pomegranate
- 1/3 cup of chopped fresh coconut (optional)
- 12 small, soft dinner rolls
Directions
- Heat the oil in a pan and add the mustard and cumin seeds. Fry until they start spluttering.
- Add the chopped onion and sauté until it turns golden brown.
- Add the boiled potatoes and mix them well.
- Add the turmeric powder, red chilli powder, roasted and coarsely ground peanuts, sesame seeds and sugar. Mix everything together and fry for a few minutes.
- Add the coriander leaves, salt to taste and pomegranate. Mix everything together and cook for another few minutes.
- Finally, add the chopped fresh coconut (optional) and mix everything together.
- Take the pan off the heat and set aside to cool.
- To assemble the Dabeli: Slice the soft dinner rolls in half.
- Scoop the potato mixture onto one half of the roll.
- Sprinkle some pomegranate and fresh coconut over the top of the potato mixture.
- Put the two halves of the roll together and press lightly.
- Serve your delicious dabeli to your family with a side of coriander chutney and sev (optional).
