Ingredients
- 4-5 chicken breasts
- 1/2 cup whole-wheat flour
- 2 large free-range eggs
- 1/2 cup gluten-free breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 2 tablespoons oil
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Cut each chicken breast into about 4 strips, about 3/4 inch thick.
- In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, and black pepper.
- Crack the eggs into a separate shallow bowl and whisk together.
- Place the gluten-free breadcrumbs into a third shallow bowl.
- Dip each chicken strip in the flour mixture and shake off the excess.
- Dip the floured chicken strips into the eggs and make sure it’s completely coated.
- Finally, roll the egg coated chicken strips in the gluten-free breadcrumbs until they’re completely covered.
- Place each breaded chicken strip on a greased baking sheet.
- Bake in preheated oven for 20 minutes.
- Serve hot and make sure everyone says, “Please, may I have some more?”
