Ingredients
- 1 cup couscous
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped crimini mushrooms
- 1/2 cup chopped zucchini
- 1/2 cup chopped bell pepper
- 1/2 cup diced carrot
- 1/2 cup diced butternut squash
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1 1/2 cups vegetable broth
Directions
- Preheat the oven to 375 degrees Fahrenheit.
- In a medium saucepan, melt the butter over medium heat. Add the olive oil, onion, mushrooms, zucchini, bell pepper, carrot, and butternut squash.
- Cook for 3-5 minutes, stirring occasionally, until the vegetables start to soften.

Add the garlic powder, oregano, and black pepper and stir everything together.
- Now it’s time to enlist the help of your two tiny chefs! Have one of them measure out and add the couscous to the pan.
