Ingredients
- 400g canned chickpeas, rinsed and drained
- 250g white quinoa
- 5 cloves of garlic, minced
- 2 tablespoons olive oil
- 500ml low-sodium chicken stock
- 2 tablespoons of tomato paste
- 1 teaspoon of smoked paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 2 bay leaves
- A squeeze of lemon juice
- 2 handfuls of baby spinach
- 2 tablespoons chopped fresh parsley
Directions
- Start by gathering all the ingredients.
- Heat the olive oil in a large pot over medium heat, and add the minced garlic.
- To get a nice color and flavor for the stew, cook the garlic until it starts to brown, about 3 minutes.
- Next, add the rinsed and drained chickpeas, quinoa and tomato paste to the pot.
- Then, add the smoked paprika, ground cumin, ground coriander and bay leaves. Give it all a good stir so that the chickpeas and quinoa are evenly coated.
- Pour in the chicken stock, and stir once more.
- Bring the stew to a boil, then reduce the heat and simmer for 25-30 minutes, stirring occasionally, until the quinoa is fully cooked.
- Remove from the heat and stir in the baby spinach and fresh parsley.
- For a zesty touch, squeeze some fresh lemon juice over the top of the stew.
- Serve the stew hot, and enjoy!
