Ingredients
- 300g of diced chicken
- 200g of white rice (long grain works best)
- 2 pieces of garlic (minced)
- 2 tablespoons of extra virgin olive oil
- 130g of slivered almonds
- 230g of diced onion
- 2 branches of fresh thyme (about 2 tablespoons worth)
- 2 teaspoons of black peppercorn
- 1 teaspoon of ground cumin
- 1 teaspoon of ground all-spice
- 480ml of hot water
- Vegetable oil for cooking
Directions
- Heat up a pan over medium-high heat. Once hot, add 2 tablespoons of extra virgin olive oil to the pan, followed by the diced chicken and garlic. Cook the diced chicken and garlic for about 5 minutes, until the chicken is lightly browned.
- Once the chicken is lightly browned, add the onion, slivered almonds, and spices to the pan. Stir everything together and cook for an additional 3 minutes.
- Lower the heat to medium-low before adding the white rice, stirring everything together to cover the rice in the pan. Let the ingredients cook for an additional 3 minutes.
- Once finished, add the hot water to the pan. Let the ingredients cook for an additional 30 minutes, or until the rice has absorbed all the liquid.
- After the rice has completely absorbed all the liquid, it’s time to serve!
