Chicken Enchilada Casserole

Ingredients
- 350 g cooked boneless and skinless chicken breasts, cut into small cubes
- 1 red pepper, finely diced
- 2 cloves of garlic, minced
- 2 cups (475 ml) chicken broth
- 1 teaspoon (5 ml) chili powder
- 1 teaspoon (5 ml) ground cumin
- 1/2 teaspoon (2.5 ml) oregano
- 1/2 teaspoon (2.5 ml) paprika
- 8 8-inch (20 cm) whole wheat tortillas
- 1 can (400 g) black beans, rinsed and drained
- 240 ml low-sodium salsa
- 2 cups (225 g) grated Monterey Jack cheese
- 1 cup (120 g) cooked long-grain brown rice, uncooked
Directions
- Preheat oven to 180°C (350°F).
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add cubed chicken, red pepper, and garlic; cook until chicken is no longer pink and vegetables are tender, about 5-7 minutes.
- Add chicken broth, chili powder, cumin, oregano, and paprika to the skillet and bring to a simmer. Simmer for 5 minutes.
- In a large baking dish, layer 4 whole wheat tortillas. Spread 1/2 can of black beans over the tortillas and top with 1/2 of the chicken mixture. Sprinkle with 1/2 cup of cheese.
- Add another layer of 4 tortillas, followed by the remaining black beans, chicken mixture, and cheese.
- Bake in preheated oven for 25 minutes.
- Meanwhile, cook the rice according to package instructions.
- After 25 minutes, remove the casserole from the oven and spread the salsa over the top. Sprinkle with remaining 1/2 cup of cheese.
- Bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
- Serve with cooked rice and enjoy!
