Carricante Shakshuka

Ingredients
- 2 cloves of garlic
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground coriander
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 bell peppers, diced
- 2 large torn tomatoes
- 250g of Carricante
- 4 eggs
- 1/2 teaspoon of paprika
Directions

Begin by prepping the ingredients. Start by crushing or mashing the garlic cloves into a paste. Then in a small bowl, mix together the cumin and coriander.

Next, heat the olive oil in a large skillet over medium heat. Add the onion and bell peppers and sauté for about 5 minutes or until the veggies are soft and translucent.

Now add the garlic paste to the skillet and fry for an additional minute. Then add the cumin and coriander and mix everything together to combine all of the flavors.

Add the torn tomatoes and let them cook for about 2 minutes. Then add the Carricante and reduce the heat to low. Simmer until the Carricante is cooked through.

Next create four small wells in the Carricante mixture and crack an egg into each one. Cover the skillet and let the eggs cook for 5 to 6 minutes until the egg whites set and the yolks remain soft.

Finally, sprinkle the paprika over the top for a bit of color and flavor.
