Ingredients
- All-purpose flour: 300g
- Fresh yeast: 12g
- Milk: 250ml
- Water: 100ml
- Butter: 120g
- Eggs: 2
- Vanilla extract: 1 teaspoon
- Lemon zest: 1 teaspoon
- Ground nutmeg: ¼ teaspoon
- Neutral-tasting oil for frying: 500ml
Directions
- In a medium bowl, mix together the flour and yeast.
- Heat the milk and water separately in separate saucepans.
- Once the milk and water have been brought to a simmer, remove them from the heat and mix them in with the flour and yeast.
- Add the butter, eggs, vanilla extract, lemon zest, and ground nutmeg to the bowl and mix everything together until a dough forms.
- Cover the bowl and leave it in a warm place to rise for 1 hour.
- Once the dough has doubled in size, turn it out onto a lightly floured surface and knead it for about 3-5 minutes.
- Cut the dough into 4 equal portions and shape each portion into balls.
- Heat the oil in a deep pan or deep fryer until it reaches 180°C.
- Carefully place the dough balls into the hot oil and fry for about 3-4 minutes, flipping them once halfway through frying.
- Once the Bugnes have reached a golden brown colour, use a slotted spoon to carefully remove them from the oil and onto a plate lined with paper towels to drain excess oil.
- Allow the Bugnes to cool for a few minutes before serving.
