Ingredients
- 150g plain flour
- 25g caster sugar (optional)
- 7.5g (1 sachet) of fast-action dried yeast
- 150ml warm full fat milk
- 2 medium-sized eggs, beaten
- 25g melted butter
- sunflower oil (for deep frying)
Directions

Add the dry ingredients - the flour, caster sugar (if using) and yeast - into a large bowl and mix together.

In a separate bowl, beat the eggs together.

Make a well in the center of the dry ingredients and pour in the eggs, the warm milk and the melted butter.

Mix until all the ingredients have just combined and a sticky dough has formed.

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes.
6.Place the dough into an oiled bowl, cover with a damp cloth and set aside in a warm place for an hour or until the dough has doubled in size.

Knock the air out of the dough by punching it and knead it one more time, then cut into 4 equal-sized pieces.

Roll each piece of dough into a sausage shape and cut into 8 equal-sized pieces.
9.Roll each piece of dough into a ball and set aside on a lightly floured surface.
10.Heat the oil in a deep-fryer or a deep pot to 180 degrees Celsius.
- Drop the beignets into the hot oil (be careful not to overcrowd the pot) and deep fry for 5 minutes or until golden-brown.
12.Remove from the oil with a slotted spoon and drain off any excess oil on some kitchen paper towel.
13.Allow to cool slightly before serving.
Recommended Sides
To make this a complete breakfast, serve with some fresh berries, crispy bacon or a fruit compote. Or make it a dessert by dusting with a sprinkle of icing sugar and serve with some vanilla ice cream. You can also get creative and serve it with Nutella, melted chocolate, banana and cream.
