Ingredients
- 250ml vegetable broth
- 250ml light beer
- 250ml whole milk
- 250g sharp cheddar cheese, grated
- 2 tablespoons cornstarch
- 1 tablespoon butter
- 1 small onion, minced
- Ground black pepper, to taste
- 2 cloves garlic, minced
- 1 tablespoon parsley, minced
Directions

In a medium saucepan over medium heat, melt the butter.

Add the onion and garlic, and cook until softened, about 3-4 minutes.

Add the vegetable broth, beer, and milk, and bring to a simmer.

In a small bowl, mix together the cornstarch and 2 tablespoons of water.

Pour the cornstarch slurry into the soup and stir to combine.

Reduce heat to low and slowly add the grated cheese and stir until melted.

Add the pepper and parsley, and season with additional salt and pepper, to taste.

Continue to simmer for 10 minutes until thickened.
