Baked Parmesan-Herb Polenta Fries

Equipment needed

Ingredients
- 500 ml vegetable stock
- 120 g coarse polenta
- 30 ml extra-virgin olive oil
- 20 g grated parmesan cheese
- 10 g chopped parsley
- 2 tsp ground oregano
- 4 cloves, minced garlic
- Freshly ground black pepper
Directions
- Preheat oven to 190C and line a baking sheet with parchment paper.
- In a wok or medium saucepan, bring the vegetable stock to a boil.
- Once boiling, reduce the heat to low and slowly add the coarse polenta. Keep stirring the wok with a wooden spoonas the polenta will start to thicken quickly.
- Now it’s time to get cheesy! Add in the parmesan cheese, parsley, oregano and garlic. Season with some freshly ground black pepper and stir until everything is well combined.
- Spoon the polenta onto your greased baking sheet and spread it evenly.
- Put it in the oven and bake the polenta fries for 25 minutes.
- When done, take out the baking sheet and let the polenta fries cool for at least 5 minutes before serving.

Tips
- To get the perfect golden-brown colour, brush the polenta fries with a bit of olive oil before baking.
