Radicchio-Sausage Pasta Salad

This dish is a hearty, delicious meal of radicchio, sausage, and pasta, balanced with a light dressing for the perfect side or main dish.
Ingredients
- 1 radicchio head, cored and finely chopped (400g)
- 4 mild Italian sausages (400g)
- 250g small pasta, such as conchiglie
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 small red onionfinely chopped (100g)
- Pinch of black pepper
Directions
- Preheat oven to 200°C.
- Place sausages on a baking sheet lined with parchment paper and bake for 25 minutes, turning halfway through.
- Meanwhile, bring a large pot of salted water to a boil. Cook pasta per package instructions.
- Heat olive oil in a large skillet over medium heat. Add garlic and red onion and cook, stirring frequently, for 5 minutes.
- Add radicchio and black pepper and sauté until the radicchio wiltsabout 3 minutes.
- When the pasta is done, drain and add to the skillet.
- Slice sausages and add to the skillet. Stir to combine.
- Serve immediately or refrigerate and serve cold.
Tip: This pasta salad is delicious served with a sprinkle of Parmigiano Reggiano for an extra dose of flavour!
