Ingredients
- 2 medium potatoes, peeled and diced
- ½ cup of frozen green peas
- 1 medium onion, finely chopped -1 teaspoon of turmeric
- ½ teaspoon of mustard powder
- 2 tablespoons of sunflower oil
- 2 cloves of garlic, minced
- 2 tablespoons of freshly chopped coriander or flat leaf parsley
- Salt and pepper to taste
Directions
- Preheat oven to 200°C and line a baking tray with parchment paper.
- In a medium bowl, mix together the diced potatoes, peas, onion and turmeric.
- Place the potato mixture on the parchment paper-lined baking tray and bake for 20 minutes, until golden and cooked through.
- Meanwhile, heat the oil in a medium saucepan over medium heat and add the garlic, stirring frequently until golden brown.
- Add the mustard powder and cook for further 1 minute, stirring constantly.
- Add the roasted potato mixture to the saucepan and cook for an additional 5 minutes.
- Lastly, remove the pan from heat and stir in the fresh coriander or parsley, salt, and pepper.
- Serve the Aloo Mutter warm and enjoy!
