Ingredients
- 500g potatoes
- 2 carrots
- 250g tinned peas
- 2 eggs
- 2 tablespoons plain flour
- 2 tablespoons olive oil
- 2 tablespoons sunflower seeds
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
Directions

Preheat oven to 180°C.

Peel and dice the potatoes into cubes of equal size. Peel and grate the carrots, then set aside.

Add the potatoes to a pot of lightly salted boiling water and cook for 10 minutes, or until soft. Drain, mash and then set aside.

Place the peas in a sieve and rinse under cold running water for 1 minute then set aside.

In a medium bowl beat the egg with a fork, then stir in the mashed potatoes, grated carrots and drained peas. Mix until evenly blended.

Add the flour, olive oil, sunflower seeds, garlic powder, onion powder and black pepper. Mix until evenly blended.

Place the mixture in the preheated oven and bake for 15 minutes or until the veggie burgers are golden brown.
