Ingredients
- 2 tablespoons of olive oil
- 1 small onion, finely chopped
- 1 large carrot, peeled and grated
- 1 large red bell pepper, chopped
- 1 large yellow bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 3 tablespoons tomato paste
- 1 cup vegetable broth
- 1 cup frozen peas
- 1 can chickpeas, drained and rinsed
Directions
- Heat the oil in a large skillet over medium heat.
- Add the onion and carrot and cook for 3-4 minutes, stirring often.
- Add the bell peppers and garlic and cook for another few minutes.
- Add the cumin, coriander, and garam masala and stir until you can smell the fragrant spices.
- Add the tomato paste and vegetable broth and bring to a boil.
- Reduce the heat to low and simmer for about 10 minutes.
- Add the frozen peas and chickpeas, then simmer for another 10 minutes.
- Serve with basmati rice and a side of warm naan bread for a delicious, kid-friendly Veg Jalfrezi!
