Ingredients
- 360ml Dashi Stock
- 1-1.5 liters of water
- 2 tablespoons Soy Sauce
- 2 tablespoons Mirin
- 2 tablespoons Sake
- 5cm Ginger, grated
- 5cm Daikon Radish, grated
- 200g Firm Tofu or Tempura Flakes, cubed
- 100g Udon Noodles, cooked
- 2 Spring Onions, finely sliced
- 4 Shiitake Mushroom, sliced
Directions
- In a large pot, combine the Dashi stock and 1 liter of water (or more, depending on the size of the pot).
- Add the soy sauce, mirin, sake, and ginger. Stir until everything is combined.
- Add the daikon radish and bring the soup to a simmer. Simmer for 15 minutes.
- Add the firm tofu or tempura flakes and simmer for a further 5 minutes.
- Add the cooked udon noodles and spring onions. Simmer for 5 minutes.
- Finally, add the sliced shiitake mushrooms. Simmer for 5 minutes or until the vegetables and noodles are tender.
- Serve the Udon Nabe hot with a side of rice and enjoy it with your picky eaters! joke The pickier they are, the more Udon Nabe they’ll need to finish!
