Ingredients
- 2 cups of Japanese short grain rice
- 2 skinless chicken thighs
- 2 stalks of scallions
- 2 tablespoons of sake
- 3 tablespoons of soy sauce
- 2 cups of chicken stock
- 1 teaspoon of sesame oil
- 1/2 teaspoon of fresh ginger
Directions

Rinse the rice in cold water and let it sit in a bowl for 15 minutes.

Cut the chicken into small cubes and place into a bowl.

Slice the scallions into thin rings and add to the bowl with the chicken.

In a separate bowl, add the sake, soy sauce, chicken stock, sesame oil, and ginger. Mix well until fully combined.

Grease the bottom of a large pot with a small amount of oil.

Add the chicken and scallions to the pot and stir-fry for 5 minutes.

Add the rice and the sake-soy mixture and mix until everything is evenly distributed.

Cover the pot and turn the heat to medium-low. Let it cook for 40 minutes.

After 40 minutes, turn off the heat and let it sit for an additional 10 minutes.

Fluff the rice with a fork and serve.
