Ingredients
- 40g couscous
- 400ml vegetable broth
- 2 plum tomatoes
- 2 spring onions
- Juice of 1 lemon
- 2 cucumbers
- A small bunch parsley
- A handful of mint leaves
- 25ml olive oil
Directions
- Place a saucepan over medium heat and pour the vegetable broth.
- Once the vegetable broth is boiling, add the couscous to the pan and stir for a few seconds.
- Reduce the heat to low and cover the pan with a lid.
- Simmer for 10 minutes, stirring regularly.
- While the couscous is cooking, dice the tomatoes, spring onions, and cucumbers and finely chop the parsley and mint.
- Once the couscous is cooked, transfer it to a bowl and let it cool for a few minutes.
- Add the diced vegetables, herbs, lemon juice, and olive oil to the couscous and mix everything together.
