Ingredients
- 2 cups of short grain white rice
- 5 cups of light non-dairy milk
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 2 tablespoons of vegan butter
- 2 tablespoons of golden raisins
Directions
- Preheat your oven to 375˚F (190°C).
- Rinse the rice until the water runs clear. Then, in a medium-sized pot, combine the rice with 4 1/2 cups of the non-dairy milk.
- Place the pot over medium heat and bring to a gentle boil stirring occasionally. Then, reduce the heat and simmer for 20 minutes, stirring frequently so the rice does not stick to the bottom of the pot.
- Once the rice is cooked, turn off the heat and transfer the rice to an oven-safe baking pan.
- Add the remaining 1/2 cup of non-dairy milk, vegan butter, ground nutmeg, ground cinnamon and raisins and give the mixture a good stir.
- Place the pan in the preheated oven and bake for 25 minutes. (QUICKLY put on your oven mitts, kids! Don’t want any hands getting hurt!)
- When the 25 minutes have elapsed, take the pan out of the oven and let it cool before serving. Enjoy!
