Ingredients
- 4 tablespoons vegetable oil
- 2 tablespoons grated fresh ginger
- 2 cloves garlic, minced
- 1/4 cup sake
- 1/2 cup soy sauce
- 2 tablespoons mirin
- 2 tablespoons packed brown sugar
- 2 cups diced onion
- 4 cups sliced shiitake mushrooms
- 1 cup enoki mushrooms, trimmed
- 1 (14-ounce) package firm tofu, cut into 1-inch cubes
- 4 cups cooked short-grain white rice
Directions
- Heat vegetable oil in a large nonstick pan over medium-high heat.
- Add ginger and garlic, and let sizzle for 1 minute before adding sake. Stir until ingredients are combined.
- Add soy sauce, mirin, and brown sugar, then whisk until everything is fully incorporated.
- Add onion, and cook for 4 minutes, stirring occasionally.
- Add shiitake mushrooms and enoki mushrooms, and cook for 3 minutes, stirring occasionally.
- Add tofu, and cook for 5 minutes, or until tofu is lightly browned on all sides.
- Serve over cooked white rice.
