Ingredients
- 1 cup of long grain white rice
- 5 tablespoons of olive oil
- 1 onion, diced
- 1 garlic clove, minced
- 1/2 teaspoon of ground cumin
- 1/4 teaspoon of ground turmeric
- 1/4 teaspoon of ground cinnamon
- 1/4 teaspoon of pepper
- 1/4 teaspoon of chili powder
- 1 can of crushed tomatoes
- 2 cups of vegetable broth
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint, chopped
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of kalamata olives, pitted and halved
- 1/4 cup of walnut pieces
- 1/2 cup of cooked garbanzo beans
- 1/4 cup of feta cheese, crumbled
- Salt and freshly ground black pepper, to taste
Directions
- Preheat oven to 350°F (175 °C).
- Heat a large skillet over medium-high heat.
- Add three tablespoons of the olive oil and heat until hot.
- Add the onions and sauté until softened, about 5 minutes.
- Add the garlic and cook until fragrant, about 1 minute.
- Add cumin, turmeric, cinnamon, black pepper and chili powder and sauté until fragrant, about 30 seconds.
- Add the canned crushed tomatoes and broth and bring to a low simmer.
- Stir in the cooked rice and remove from heat.
- Add the parsley, mint, and cilantro and season with salt and pepper to taste.
- In a medium bowl, combine the remaining two tablespoons of olive oil with the olives, walnuts, garbanzo beans, feta cheese, and parsley.
- Mix to combine and season with salt and pepper to taste.
- Transfer the rice mixture to a greased baking dish and top with the olive and feta mixture.
- Bake in preheated oven for 15 to 20 minutes, or until the top is lightly browned.
