Ingredients
- 1 medium potato
- 8oz spinach
- 2 tablespoons potato starch
- 2 tablespoons vegetable oil
- 1/2 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon cumin
- Salt, to taste
- Pepper, to taste
Directions

Peel the potato and cut it into small cubes, about 1/2 inch in size.

Rinse the spinach leaves and chop finely.

In a bowl, add the cubed potatoes, potato starch, and the chopped spinach.

In a small bowl, mix together the ground coriander, garam masala, turmeric, cumin, salt, and pepper and then add to the potato mixture. Mix well until everything is evenly distributed.

In a saucepan, heat up the vegetable oil over medium heat.

Once the oil is hot, take a spoonful of the potato mixture and drop it into the saucepan. Cook for a few minutes on each side until golden brown.

Once the samosa has cooked on both sides, remove it from the pan and place it on a paper towel to absorb the excess oil.

Repeat steps 6-7 until all of the potato mixture has been used.

Serve the samosas hot with your favorite chutney for dipping!
