Saltimbocca alla Romana

Ingredients:
- 4 slices of prosciutto (150 grams total), thinly sliced
- 4 veal cutlets (400 grams total), thinly pounded
- 4 sage leaves (2 grams total), chopped
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) white wine
- Black pepper, finely ground
Directions:
- To begin, get a large platter and lay out the pieces of prosciutto. Place the cutlets of veal on top of each piece of prosciutto.
- Sprinkle the chopped sage leaves over the veal and prosciutto.
- Before doing the next step, put us all in a joking mood with a fun fact: did you know that the scent of sage is used to make sausages in Italy?
- Heat the olive oil in a large skillet over medium heat.
- When the oil is hot, carefully place the cutlets in the skillet and cook them for about 2 minutes on each side, until they are golden brown.
- Add the white wine to the skillet and continue to cook for another minute.
- Finally, season the cutlets with freshly ground black pepper.
- Serve the Saltimbocca alla Romana with your favorite side dish.
Recommended Sides:
- Roasted broccoli: Preheat the oven to 200 degrees Celsius. Cut the broccoli into florets and spread on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the preheated oven for 10-15 minutes, just until tender and lightly browned.
- Garlic bread: Preheat the oven to 200 degrees Celsius. Slice a baguette in half lengthwise and place on a baking sheet. Spread softened butter over the baguette, and then add a pinch of salt and garlic powder. Bake for about 10 minutes until golden brown and crispy.
