- 2 teaspoons of vanilla extract
- 2 large eggs
Directions
- Preheat oven to 180°C
- Start by preparing the rice. Put the rice in a saucepan with 650ml of water and bring it to a boil over medium-high heat. Once it starts boiling, reduce the heat to medium-low and let the rice simmer for 12 minutes until the water has evaporated and the rice is fully cooked.
- In a large bowl, whisk together the eggs and skimmed milk until well blended.
- Add the vanilla extract, cooked rice, and whisk them together.
- Grease a baking dish with butter or nonstick spray and pour the mixture into the pan.
- Cook in the preheated oven for 20 minutes until the pudding is set and the top is lightly browned.
- Let cool before serving.
