Ingredients
- 1 cup (200 g) green lentils, rinsed
- 1 large (250 g) onion, diced
- 2 cloves (4 g) garlic, minced
- 2 cups (300 g) celery, diced
- 2 cups (300 g) carrots, diced
- 1 cup (170 g) green peas, fresh or frozen
- 4 cups (1L) vegetable broth
- 1 tablespoon (15 mL) olive oil
- Black pepper, to taste
Directions

Heat a large pot over medium heat.

When the pot is hot, add the olive oil and onion, stirring until softened, about 2 minutes.

Add the garlic and stir until fragrant, about 30 seconds.

Add the celery, carrots, peas, and lentils and stir for another minute.

Pour in the vegetable broth and stir to combine.

Bring the mixture to a boil, then reduce heat to low and simmer for about 15 minutes, or until the vegetables and lentils are tender.

Taste the potage and season with black pepper, to taste.
