Ingredients
- 1 red pepper, cut into medium-sized cubes
- 2 yellow peppers, cut into medium-sized cubes
- 1 red onion, diced
- 2 cloves of garlic, finely chopped
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1/4 teaspoon of dried thyme
- 1/4 teaspoon of freshly cracked black pepper
- 2 tablespoons of balsamic vinegar
- 2 tablespoons of tomato puree (homemade or store bought)
Directions
- Preheat the oven to 350°F (176°C).
- Place the chopped peppers and the red onion onto a roasting tray.
- Drizzle the vegetables with olive oil, then sprinkle them with the oregano, thyme and black pepper.
- Roast the vegetables in the oven for 45 minutes.
- Heat a saucepan over medium heat and add the garlic and cook for 2 minutes, stirring continuously.
- Add the roasted vegetables, balsamic vinegar and tomato puree and continue cooking for an additional 15 minutes.
- After 15 minutes, the peperonata is ready. Serve it with crusty bread and enjoy.
