Ingredients
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon chilli powder
- ⅛ teaspoon turmeric powder
- 2 tablespoons tomato paste
- 2 medium potatoes, peeled and cut into small cubes
- 1 cup green peas
- 2 small carrots, peeled and finely chopped
- 1 small onion, finely chopped
- 1 cup cauliflower florets
- ½ cup diced capsicum
- 2 green chillies, ground into paste
- 2 tablespoons chopped coriander leaves
- 1 tablespoon chaat masala
- 2 tablespoons fresh lemon juice
- 4 pav (dinner rolls)
- Butter for the pav (dinner rolls)
Directions
- Heat the butter in a large pan over medium heat.
- Add the garlic and sauté for a few seconds.
- Add the cumin powder, coriander powder, chilli powder and turmeric powder.
- Add the tomato paste and mix it in.
- Add the potatoes, green peas, carrots, onion, cauliflower, capsicum and green chilli paste.
- Cover the pan and let it cook for 10 minutes, stirring occasionally.
- Uncover the pan and add the coriander leaves, chaat masala and fresh lemon juice.
- Continue to cook for another 5 minutes, or until the vegetables are cooked through.
- Take the pan off the heat and let it cool until it’s safe for the little chefs in the house.
- Let the kids help you assemble the pav bhaji: Butter the dinner rolls and place them in a plate. Be careful not to choke on the butter, kids!
- Serve the pav bhaji with the rolls and enjoy!
