Ingredients
- 100 g of butter
- 100 g of finely chopped onion
- 75 g of finely chopped celery
- ¼ teaspoon of freshly ground black pepper
- 1 tablespoon of fresh parsley
- 500 ml of dry white wine
- 24 oysters (shucked)
- 120 g of fresh spinach
- 40 g of grated Parmesan cheese
Directions
- Preheat oven to 200°C.
- In a large saucepan, melt butter over low heat.
- Add the onion, celery, and black pepper, and cook until vegetables are softened, about 5 minutes.
- Add the parsley and the white wine to the pan and stir.
- Arrange the oysters on an oven-safe baking dish and top each oyster with a few leaves of spinach and then a generous sprinkle of the Parmesan cheese.
- Pour the white wine mixture over the oysters.
- Bake for 10 minutes until the cheese is bubbly and golden brown.
- Serve hot, with a side of your favorite veggies.
