Ingredients
- 2 cups of boiled potatoes, mashed
- 2 carrots, grated
- ½ cup of frozen or canned peas, rinsed
- 2 tablespoons of fresh coriander, finely chopped
- 2 tablespoons of fresh mint, finely chopped
- 1 teaspoon of cumin powder
- ½ teaspoon of garam masala
- ¼ teaspoon of chili powder
- 2 tablespoons of whole-wheat flour
- 2 tablespoons of unrefined coconut oil, melted
- 6 ounces of firm tofu, crumbled
- 2 tablespoons of water
Directions

Preheat your oven to 375-degrees F (190 C).

In a large bowl, combine the mashed potatoes, grated carrots, peas, coriander, mint, cumin powder, garam masala, chili powder, whole-wheat flour, 1 tablespoon of melted coconut oil, and the crumbled tofu.

Mash and mix everything together until a dough forms.

Line a baking tray with parchment paper.

Using a tablespoon, scoop the dough and form small balls.

Place the koftas on the baking tray and brush with the remaining tablespoon of melted coconut oil.

Bake in the preheated oven for 25-30 minutes, or until golden.
