Ingredients
- 2 medium carrots
- 2 celery stalks
- 1/2 red bell pepper
- 1/2 yellow bell pepper
- 1/2 cup green beans (in small pieces)
- 1/2 cup corn (frozen and thawed)
- 2 tablespoons vegetable oil
- 1 teaspoon mustard
- 1 teaspoon freshly squeezed lemon juice
- Salt and pepper to taste
Directions
- Begin by prepping all of your vegetables. Start with the carrots - peel the outside skin off and then cut them into half-inch cubes.
- Rinse the celery stalks under running water and cut into half-inch cubes.
- Cut the bell peppers in half, remove the seeds, and then also cut into half-inch cubes.
- The green beans should be cut into 1/4-inch pieces.
- The corn should be thawed before adding to the dish.
- Heat the oil in a large skillet over medium heat and then add all of the vegetables.
- Cook for about 10 minutes, stirring frequently to prevent any of the vegetables from burning.
- Add the mustard, lemon juice, salt, and pepper.
- Lower the heat to low and cook for an additional 5-7 minutes, stirring occasionally.
- When the vegetables are done, remove from the heat and let cool before serving.
